Château MOULIN de la BRIDANE
Château Moulin de la Bridane has belonged to the Blancan and Saintout families for almost three centuries. Part of the estate lies around the western edge of the village of Saint Julien. The rest is at the top of the hillside looking down onto the Grand Crus Classés and across to the Gironde Estuary.

Appellation
The quality of the wines of Saint-Julien is highly consistent. The Grands Crus Classés represent 80% of the surface area, the rest being made up of Crus Bourgeois and Crus Artisans. The wines of the Saint Julien appellation are remarkable for their colour, body and bouquet of exquisite finesse. These are wines that can be laid down to age over long periods of time.

Vine-growing
Manual leaf-stripping when the grapes change colour. Green harvesting on excessively productive plots of vines.
Winemaking and maturing
The grapes are picked when they are ripe and are sorted by hand. Some of the juice is often run off. Fermentation in vats with full temperature control. Matured for 9 to 16 months in barrels, 1/3 of which are new. Fined using egg whites. No filtration.
Oenologist's remarks
Château Moulin de la Bridane is very long lasting in the mouth and is characterised by its original bouquet drawn essentially from its deep gravel subsoil.
The sommelier's tip
Château Moulin de la Bridane will bring out the best in braised veal, roast pheasant or fillet of lamb with truffles.

Cuando yo era pequeña, durante un par de veranos, mis amiguillos y yo hacíamos excursiones al monte para coger capota, luego la vendíamos y sacábamos dinerillo para las fiestas. La capota son alcaparras. Yo por entonces solo las cogía, no las comía. Si hubiera sabido cuanto me iban a gustar de mayor, quizás, las hubiera vendido más caras. Pasábamos el día pateando monte, en agosto, y no nos daban ni “pa pipas”. Eso sí, era súper divertido.
Ahora las compro en el súper aunque, tengo planes de volver a coger capota en verano. Y las suelo cocinar mucho en esta receta vegetariana de fusilli con alcaparras, a la pasta las alcaparras les va genial, y si la pasta es rallada tipo fusilli o hélices, mejor que mejor, queda jugosa y tica.
Los ingredientes
400 gr. de fusilli, 1 kg. de tomate natural triturado, 1 puerro, 1 pimiento rojo pequeño,3 cucharadas grandes de alcaparras, orégano, pimienta negra (opcional), aceite de oliva virgen extra (AOVE) y sal.
La preparación
Cocemos la pasta en abundante agua con sal el tiempo que indique el fabricante.
Picamos muy fino el puerro y el pimiento rojo y los mareamos en AOVE con una pizca de sal hasta que queden pochados. Añadimos las alcaparras y el tomate, cocemos 5 minutos y mezclamos con la pasta, aliñamos con orégano y pimienta si nos gusta. Espolvoreamos con parmesano recién rallado y a comer.
Rigatoni With Grilled Peppers and Onions
In the warmer months, take advantage of the grill and use it to infuse smoky flavor into vegetables. Grilled veggies are great in everything from salads to sandwiches to pasta, as is the case with this recipe.
Thick chunks of charred red onions and bell peppers are tossed with hearty rigatoni. Spinach provides a crispness and basil gives the pasta a summery, farm-fresh quality.

Ingredients
2 medium red onions, sliced into 1/2-inch-thick rings
2 large red bell peppers, cut into quarters
1 tablespoon olive oil
kosher salt and pepper
12 ounces (4 to 5 cups) rigatoni
1 bunch spinach, stems trimmed, or one 5-ounce package
1 cup (about 3 1/2 ounces) grated Parmesan
3/4 cup basil leaves, thinly sliced
Directions
- Bring a large pot of water to a boil.
- Heat a grill or grill pan to medium-high.
- In a large bowl, toss the onions, bell peppers, oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Grill, turning occasionally, until tender, 8 to 10 minutes. Transfer to a cutting board and cut into bite-size pieces.
- Cook the pasta according to the package directions. Reserve 1 cup of the cooking water, drain the pasta, and return the pasta to the pot. Add the grilled vegetables, spinach, the reserved pasta water, and 3/4 cup of the Parmesan to the pasta and toss to combine.
- Top with the basil and the remaining Parmesan before serving.
